What distinguishes Edo Sushiya (already today known as the „old” Edo) and what gained its recognition among food critics and a large number of regulars of the longest-running sushi bar in Krakow is a constant and sometimes even conservative adherence to the traditional rules of Japanese cuisine.
This manifests itself in the form and size of the served sushi, usage of only Japanese ingredients of the highest quality or keeping to the traditional Japanese recipes. At the same time we have noticed that our gradually introduced fusion novelties on the menu began enjoying much attention and recognition from our guests.
The consequence of these observations was the idea of a wider range of Japan-inspired dishes, with clear fusion components. This idea became concrete in the newly opened Edo Fusion restaurant.
